Whether you're planning a tailgating party or a formal holiday dinner, beef is the entrée that the rest of the meal is planned around. But what to make, how much to buy, how much to cook and how to serve it can be daunting.
If you're serving steaks – a cut that should be served whole – planning is easy. Buy as many cuts as you have people to serve.
If you plan to slice or carve the meat once it has been cooked, buy between 6 and 8 ounces of meat per serving.
If there are bones or fat that will be cut off before serving, you will need to buy more than 8 ounces per person.
Remember, all beef shrinks slightly when cooked.
A roast can be cooked slowly, does not require as much attention from the cook and will hold its heat while waiting to be served.
