With great intensity and depth of flavor Cabernet Sauvignon benefits from oak-barrel aging to impart a woody, toasty cedar or vanilla flavor while slowly oxidizing it and softening the tannins. Classic Cabernet Sauvignon flavors are currant, plum, black cherry and spice. Cabernets are big wines with big flavor that can overpower subtle flavors on your menu. Good Cabs start out dark garnet in color, with firm acidity, firm tannins and a full body. It's best to pair Cabernets with intense rich flavors.
