Pinot Noir. California and Oregon are producing easy-drinking Pinot Noir wines with classic black cherry, spice, raspberry, strawberry and currant flavors, and an aroma that can resemble wilted roses, along with earth, tar, herb and cola notes. Pinot Noir can be tannic, especially when it's fermented with some of its stems – a practice vintners use to contribute to the wine's backbone and longevity.

Pinot Noir pairs nicely with mint, cinnamon and sage.
